Guimauve






Guimauve, French for marshmallow, is nothing like the stuff Americans smash between sandy graham crackers or sprinkle on holiday yams. The gourmet confection adored in France, is delicately flavored with anise or orange or tea, lightly colored, sometimes sprinkled with chocolate or coconut and artfully displayed in long strands or stout cubes in apothecary jars.
